In charge of holiday dinner this year? This slow cooker macaroni and corn casserole is the traditional side of the Midwest! Being in a crockpot, it travels well AND saves precious oven space. It is cheesy, creamy and perfect as a Thanksgiving or Christmas side. It also makes a great side for steak or add protein to make this a weeknight meal!

Having 3 young kids under 5 that are picky as heck most days– it is nice to have this recipe up my sleeve. What kid doesn’t like a cheesy comfort food? It is great to just add it to the crockpot and go.

Crockpot Macaroni and Corn Casserole Ingredients
just a handful of pantry ingredients makes this crowd pleasing dish.
- Cream Style Corn
- Sweet Corn
- Velveeta Cheese
- Butter
- Elbow Macaroni

The Easiest Slow Cooker Corn Casserole
just dump, and go (don’t forget to stir)
- Prepare
spray crockpot with baking spray for easier clean-up, cube butter and velveeta.
- Combine
add all ingredients to the crockpot. Stir well and add lid.
- Bake and Enjoy!
Set crockpot to 90 minutes to 2 hours. Stir every half hour, approximately, to avoid noodles burning. Enjoy!
Substitutions or Variations
- add 1 lb of browned ground beef or cut up smoked sausage to this recipe to make a full meal.
- substitute Velveeta with a cheddar cheese, BUT it won’t be as creamy. I would suggest replacing half at most.
- I have subbed creamed corn for another can of sweet corn again, it still worked well.

Yes. Just thaw first or add it directly–but cooking times may be altered. There will be less liquid in the frozen, so watch the casserole to be sure no additional liquid needs to be added to avoid dry out.

Yes, you may replace with cheddar BUT the Velveeta makes the recipe very creamy. You may need to add milk for creaminess.
Absolutely! Browned ground beef, diced ham, bacon or smoked sausage diced up.
Yes, place in 8×9, or similar, sized casserole dish. Bake covered for 25 minutes, and uncovered an additional 20-25 minutes at 350 F.
Store in fridge for 3-4 days in air tight container. Reheat in microwave slowly. Add a little milk if needed. This could be frozen as well.

Slow Cooker Macaroni and Corn Casserole
Equipment
- common cooking utensils
Ingredients
- 1 cup dry elbow macaroni
- 6 oz velveeta cubed
- 8 tbsp butter cubed
- 15 oz can cream style corn
- 15 oz can sweet corn
Instructions
- Spray inside of crock with cooking spray for easier clean up.
- Dump both cans of corn, macaroni, cubed Velveeta and cubed butter into the crockpot. Give it a good stir.1 cup dry elbow macaroni, 6 oz velveeta, 8 tbsp butter, 15 oz can cream style corn, 15 oz can sweet corn
- Cook in crockpot on "high" for 1 hour 30 minutes. Giving a stir approximately every 30 minutes to keep the pasta from sticking to the crock. Enjoy!
