This easy, cheesy creamy crockpot corn is a perfect Thanksgiving or Christmas side-dish recipe. It is quick, easy and beginner friendly. Why is it so easy? All you have to do is dump all the ingredients in a crockpot!

Being a true Iowan, I love sweet corn all year round! Every year I am sure to grow corn in my own garden or pick some up from a local farmer to freeze and enjoy all winter long. Get my recipe for how to make freezer corn.
Creamy corn is something that is a must-have at Thanksgiving, Christmas or pretty much any potluck! As much as I love just plain sweet corn with a little salt or pepper, this Easy Creamy Crockpot Corn takes it to a whole new level. I used my own freezer sweet corn for this recipe, but you could easily use corn from the store as well.
Ingredients in Creamy Crockpot Corn
- Corn – about 9-11 cups will do the trick. This recipe is very forgiving. I used freezer corn, but drained canned corn would work fine, too.
- Cream Cheese- 11 oz of cream cheese, cubed. Light or regular cream cheese can be used.
- Velveeta – 8 oz of Velveeta, cubed. Cheddar cheese (hand shredded for best melting) could also be used, however I find Velveeta just melts better.
- Sugar- 3 tbsp of sugar to sweeten things up a bit.
- Butter – 1/4 cup of butter
- Water- 3 to 4 tbsp of water to help combine things because it is creamy!

How to make crockpot corn with Velveeta:
This is so easy- it barely needs any instructions!
- Line a crockpot with a liner (optional but makes clean up so easy).
- Next, dump all of the ingredients in the crock. Give it a good stir so everything is well combined.
- Cook on high for 1-2 hours until cheese is melted and corn starts to bubble or about 3 hours on low.
Substitutions and Variations to Cheesy Corn:
This creamy cheesy crockpot corn is delicious as it is, but here are some ways to customize it:
- Replace regular cream cheese with lite cream cheese if you wish.
- Try different varieties of cheese
- Add different spices like chili powder, cumin, paprika. cilantro for more of a Mexican Style Corn
- add jalapeรฑo peppers, bell peppers or onion
- Top the corn with a crust made of crackers or breadcrumbs (add butter to the crushed crackers!)

How to store cheesy corn
This creamy cheesy corn will make great leftovers. Just cool and store in an airtight container in the refrigerator for up to 4 days. Warm in microwave or stove top.
Prep Ahead: you can assemble this dish the night before and stick in fridge to quickly put in the crockpot the next morning.
Can you freeze this creamy corn? Yes! If you have a lot of leftovers – I suggest freezing in portions. Then just defrost and reheat! It will taste good after being frozen. Just thaw and warm in microwave when ready to eat again.

Crockpot Liner
Crockpot liner is optional, but makes for easier clean up. I am the kind of girl that gets off brand where I can to save money, but (affiliate link) Reynold’s Crockpot Linersare the only ones that I have had luck with not tearing. I have tried off brand liners but felt the Reynolds brand held up better as far as tearing.

The Crockpot ‘My Time’ Slow Cooker is on my Black Friday or Christmas list this year. You tell the crockpot what time you want the meal ready, and it cooks based on that setting, which avoids your food being on ‘keep warm’ for hours and getting mushy!
FAQs of Creamy Crockpot Corn with Velveeta
Yes- cool any leftovers and freeze. Thaw and warm in microwave to eat again.
Absolutely- grease a casserole dish and dump all the ingredients in. Give it a good stir. Cover and bake at 350 F for about 30 minutes, stirring half way. Then, uncover- give another good stir and bake an additional 10-15 minutes until bubbling and everything is well melted. It will be crispier on top this way but just as delicious!
To make this lighter- I would suggest using light cream cheese, and cutting the butter and velveeta in half. The corn will still turn out, but won’t be as ‘creamy and cheesy’.
Try adding taco seasoning, jalapeรฑos or onions to this dish to give it a little spice.

Equipment
- 1 crockpot 6-8 qt
- 1 spoon for stirring
- 1 measuring utensils
- 1 crockpot liner optional for easy clean up
Ingredients
- 9-11 Cups Sweet Corn or frozen corn from store
- 11 Ounces Cream Cheese can substitute with lite cream cheese
- 1/4 Cup Butter cubed
- 3-4 Tbsp Water
- 3 Tbsp Sugar
- 8 oz Velveeta Cheese can be off brand velveeta
- salt & pepper to taste
Instructions
- In a crockpot, mix all ingredients.
- Cook on low for 1-2 hours on high until cheese is melted and corn starts to bubble OR 3-4 hours on low.
