- chicken breast – use rotisserie chicken, canned chicken or make shredded chicken in the instapot or whatever method you like best!
- Cream of Mushroom Soup – i like Campbells cream of mushroom soup the best. I have also considered using this healthier, organic, cream of mushroom soup.
- Crescent Rolls – the canned kind you find in the refrigerated section of the grocery store.
- Frozen Mixed Vegetables – a blend of peas, carrots, beans and corn works well
- Sour Cream – light or regular version
- Cheddar Cheese – hand shredded melts best
- Seasoning: Minced Garlic, Minced Onion, Italian Seasoning
How to Make this Recipe
- Preheat oven to 375 F.In a medium sized bowl combine everything together BUT the crescent rolls and cheese.
- Spray a 9×9 pan and then add the mixture to the bottom. Next, top with shredded cheddar cheese.
- Lastly, pop the can of biscuits and break into about 1 inch pieces and scatter over the top.
- Bake uncovered at 375 F for 18-22 minutes until casserole is bubbling and crescent top is golden.
Substitutions or Variations
- Protein: try ground beef, ground turkey or ground venison in place of chicken
- Substitute crescent rolls with biscuits
- Add a little Worcestershire sauce for extra flavor
Leftover and Freezer Instructions
Leftovers: let the casserole cool and store in airtight container in fridge for up to 4 days. Warm leftovers in the microwave.
Freezer Instructions: assemble the casserole but do NOT bake. Package in freezer safe containers and label. Store in freezer for up to 3 months. To bake- thaw completely in fridge and bake as instructed per recipe. Let the casserole set out while warming oven.

Creamy Chicken Cream of Mushroom Casserole (30 Minutes)
Equipment
- 1 9×9 casserole dish
- medium sized bowl
- common cooking utensils
Ingredients
- 1 12.5 oz can of shredded chicken breast or about 1.5 cups
- 1 10.5 oz condensed cream of mushroom soup or cream of chicken soup
- 3/4 cup frozen mixed vegetables (corn, peas, carrots, green beans)
- 1/4 cup sour cream
- 8 oz can crescent rolls or biscuits
- 1 cup shredded cheddar cheese
- 1 tsp italian seasoning
- 1 tbsp minced onion
- 1 tbsp minced garlic
Instructions
- Preheat oven to 375 F. In a medium sized bowl mix the chicken, seasonings, soup and sour cream together. Add veggies.
- Spray a 9×9 pan and add the filling to the bottom. Layer with cheddar cheese.
- Open the can of crescent rolls or biscuits and break into about 1 inch pieces. Top the casserole with the crescent rolls.
- Bake at 375 F, uncovered, for 18-22 minutes until casserole is bubbling and crescent rolls are golden.
