This creamy beef & rice casserole is the perfect weeknight meal for your family. Ground beef, rice, cream of mushroom soup, sour cream mixed veggies, onion & more. Simple ingredients that you might have sitting in your cupboard!

Ingredients in Creamy Rice and Beef Casserole
Ground beef- pretty self explanatory. 1 pound of lean beef, our homegrown beef has about an 85% lean blend.
Rice- this does not need to be cooked prior to baking which is nice. Long grain white rice or brown will work. I used white rice, brown may take longer to cook.
Cream of mushroom soup- or, cream of anything soup. 2 cans of condensed soup help make this recipe creamy.
Veggies- my family is not a big fan of vegetables (my husband I should say) so I limited it to 1/2 cup of mixed vegetables in this recipe. You can add more if your family members are less picky! I did a blend of carrots, peas and green beans.
Mozzarella Cheese- shredded, 1-1/2 cups. Use 2 cups if you love cheese. This is for the top.
Sour cream- this adds to the ‘creaminess’ of the recipe. Use light or even plain Greek yogurt if you wish.
Spices: minced onion, minced garlic, Italian blend seasoning and salt/pepper. You can use a diced onion instead of minced if you wish.
How to make creamy beef & rice casserole
How to make this casserole:
- Brown the beef
Preheat the oven to 375 F. in a large skillet, you will sauté the garlic and minced onion for a moment and then add the ground beef to brown.
- Make the mixture
If skillet is large enough, add the remaining ingredients, EXCEPT CHEESE, and combine well. Dump the mixture into a 9×13 greased pan once combined. Top with mozzarella.
- Bake
cover with foil for 30 minutes and bake at 375 F. Then uncover and bake an additional 15-20 minutes until rice is softened to your liking.
Substitutions and Variations
- Meat: try ground turkey, ground venison or even ground chicken
- Vegetables: add more veggies, less or try different kinds.
- Cheese: use a combination of mozzarella and cheddar cheese.
- Soups: try different flavors of condensed soup
leftover Storage Instructions for beef and rice
Cool the casserole and store in an air tight container for up to 4 days. To reheat just warm in microwave.
Freezer: I have not tried freezing this recipe, however, I imagine it could get a bit dry. Thaw and warm in microwave potentially adding more liquid such as milk or even sour cream to help bring the dish back to it’s texture.

- 1 9 x 13 casserole dish

Ingredients
- 1 lb ground beef
- 1 tbsp minced onion or small diced onion
- 1 tbsp minced garlic
- 1-1/2 cups rice, uncooked brown or white long grain rice
- 2 15 oz cans cream of mushroom soup (condensed) or cream of chicken, celery, etc
- 1/2 cup frozen veggies, optional add a mix veg blend (carrots, peas, beans) or riced cauliflower, etc.
- 1/3 cup lite sour cream
- 1 tsp Italian blend seasoning
- 1/2 tsp salt
- 1/2 tsp pepper
- 1 cup milk
- 1-1/2 cups mozzarella cheese or to your liking
Instructions
- Preheat oven to 375 F. Grease your large skillet and add the minced onion & garlic. Let simmer for a minute before adding the beef to brown. Drain fat.
- If your skillet is large enough, add all ingredients to it except the cheese. Mix well and then transfer to a 9×13 baking dish. Top with your mozzarella cheese.
- Cook at 375 F covered with foil for 30 minutes. Uncover, and cook an additional 15-20 minutes until rice is tender and cheese is golden.
