This creamy beef & rice casserole is the perfect week night meal for your family. Ground beef, rice, cream of mushroom soup, sour cream, spinach, frozen veggies, onion & more. Simple ingredients that you might have sitting in your cupboard!

Ingredients
Ground beef- pretty self explanatory. Need 1 pound of beef, you could replace with chicken or ground turkey and I think it would taste good.
Rice- I used brown rice because that is what I had sitting in the cupboard, however you could use white as well. You do not cook it before, it is cooked while baking.
Cream of mushroom soup- or, cream of anything soup. I tried it with a powder of cream of mushroom and added 2-1/2 cups of milk. It turned out great (but if you do it this way, omit the water/milk called in the recipe). Cream of chicken or celery would work fine.
Veggies- use 1-2 cups of finely chopped spinach, the amount you use is up to your families preference. I used about 1 cup, but if your family loves veggies add more. 1/2 cup frozen veggies such as peas, carrots, broccoli, riced cauliflower, can be added.
Mozzarella Cheese- shredded, 1 cup. Use 2 cups if you love cheese. This is for the top.
Sour cream- this adds to the ‘creaminess’ of the recipe. Use light or plain greek yogurt if you wish.
Onion, garlic & more- I used a small onion, but feel free to use a large one if that is how you prefer your food. Minced garlic tastes delicious in this recipe. Also add oregano, salt & pepper to your taste.
How to make creamy beef & rice casserole
- Brown the ground beef in a skillet with onion and garlic.
- in a large casserole dish, add the ground beef mixture, soups, uncooked rice and liquid. Do not add the cheese.
- Bake covered 30 minutes at 350 F. Then, uncover and bake another 20-30 minutes until rice is softened to your liking. The last 5 minutes of baking, sprinkle the mozzarella on and let it melt.
**oven times vary, type of casserole dish, etc so check your rice carefully- if may need more or less time to bake.

Creamy Ground Beef & Rice Casserole
Equipment
- 1 skillet
- 1 bowl large
- 1 9 x 13 casserole dish
Ingredients
- 1 lb ground beef
- 1 small onion diced
- 2 tsp minced garlic
- 1-1/2 cups rice, uncooked brown or white
- 1 can cream of mushroom soup or cream of chicken, celery, etc
- 1-2 cups spinach finely chopped
- 1/2 cup frozen veggies, optional broccoli, riced cauliflower, mixed veggies,etc
- 1/3 cup sour cream
- 1/2 tsp oregano
- 1/2 tsp salt
- 1/2 tsp pepper
- 1 cup water or milk
- 1 cup mozzarella cheese
Instructions
- Preheat oven to 350 F. Brown the beef, onion & garlic in a skillet. Once completely cooked, drain.
- Mix all ingredients together in large bowl, except mozzarella. Then put in casserole dish.
- Cook at 350 F covered for 30-35 minutes. Uncover, and cook an additional 20-30 minutes until rice is tender. Remove foil, add mozzarella and cook another 5 minutes until melted.
