No bake sweet pepper poppers-perfect for your next grill out or even football game this fall. These mini stuffed peppers are quick to make, and made with the right ingredients can be a healthy little snack. Mini peppers, low fat cream cheese, bacon, seasoning, jalepeno & cheddar cheese. Simple & delicious. No baking means not heating your house up on these hot summer months, too!

I haven’t always been a big pepper fan, but recently have become more interested in them! I love this recipe, and even a good Jalapeño Popper Egg Muffin. One reason I never thought of cooking with Jalapeños- I didn’t realize that if you took out the membranes and seeds- they are actually pretty mild.

Perfect snack for vacation!
We were on a friends vacation in the Black Hills earlier in June and my friend Jessica made a similar version to this. I LOVED it, everyone did! I immediately went home & researched similar recipes. These little poppers were perfect for our many grill out nights on vacation,and also would have been great added to our picnic lunches when we were 4-wheeling the trails of the Black Hills.
Ingredients
16 oz bag of sweet mini peppers- found at just about any grocery store. I estimated about 12 per bag, but this will vary. Seed these out and cut them long ways.
Jalepeno pepper- I do not like super spicy meals.I seeded & rinsed this pepper to be sure no heat would be added to the recipe. If jalepenos scare you, leave it out.(they scare my family so I totally understand. There was never a jalepeno in the Wild household growing up!)
Cream Cheese- I used the lowfat cream cheese & it tasted great. Consistency was still great too. Feel free to use regular fat if you want.
Bacon- cooked & crumbled. Feel free to replace with turkey bacon for a leaner option. If in a pinch, grab bacon bits. My favorite bacon bits are the Members Mark brand at Sams Club. Here is a recipe I follow on cooking bacon from one of my favorite food bloggers, Spend with Pennies.
Cheddar Cheese- I used 1/2 cup. Add a little extra on the top of the poppers for decoration if you wish. I think the cheese in this recipe could be versatile, add what you like best.
Seasoning- I used simple seasonings-onion powder & worcestershire sauce. This is an open book for seasonings- garlic, red pepper flakes, pepper. Use what you like.
Variations of Sweet Pepper Poppers
- Spices and Seasonings: add red pepper flakes, garlic, everything bagel seasoning, etc.
- Cheese: try different varieties of cheese
- Baking: you could bake these if you prefer them warm. If baking, you could wrap with bacon instead of crumbling into the mixture.
How to Make Stuffed Mini Peppers
Prep the peppers: rinse the peppers with cool water and quickly pat dry. Sweet Peppers: trim the tops off, and slice in half vertically. Take the “insides” of the pepper out to form a nice “boat” for the filling! Jalapeño Pepper: trim the top off, take out all the seeds if you do not want heat, and dice into small pieces.
Make the filling: bring the cream cheese to room temperature if you have time, so that it is easier to work with. Even warming it in the microwave for 15 seconds can help! Then, add the Worcestershire and onion powder to the cream cheese. Next add the shredded cheese, bacon and diced jalapeño.
Assemble: once you have the filling mixed well. Add about 1 tbsp to each pepper slice. Sprinkle with more cheese on top if you wish for garnish. Enjoy!
How to Store Leftovers
To store leftover mini poppers, store in airtight container in the refrigerator for up to 3 days. I do not recommend freezing these.

Very mild. I removed all the seeds from the jalapeño which makes this very mild!
While mini peppers work best, you could slice a large bell pepper into strips or quarters and top with the filling, too!

No Bake Sweet Pepper Poppers
Equipment
- 1 bowl for mixing
- 1 knife for chopping
- measuring utensils
Ingredients
- 1 16 oz bag mini sweet peppers cut in half & seeded.
- 6 peices bacon, cooked + crumbles replace with good quality bacon bits if necessary
- 1 jalepeno diced, seeded & rinsed
- 1 8 oz package low fat cream cheese softened can use regular too
- 1/2 cup shredded cheddar cheese
- 2 tsp onion powder
- 2 tsp worcestershire sauce
Instructions
- Wash sweet peppers, dice in half and seed. Then, seed & dice up the jalepeno peppers into small pieces.
- Mix the cream cheese, onion powder & worcestershire together. Once mixed well, add the crumbled bacon, diced jalepeno pepper, cheddar cheese.
- Add about a tablespoon of cream cheese mixture to each sweet pepper. Depending on the size of the pepper you could use less or more. Sprinkle with more cheese if you wish. Enjoy!
