Looking for a fun new recipe for your next hamburger? Try smash burger tacos recipe. The tortilla really soaks in the burger juice and makes for a delicious crunchy hand held meal! Ground beef, cheese, tortillas and a delicious homemade mayo-based sauce.

Ingredients for the ultimate smash burger tacos
- BEEF: Ground beef, I use good quality home grown Iowa beef but any beef will do. Ground turkey or venison could also be used.
- Cheese: this is sliced cheese to top the burger with. Colby jack, cheddar or really any kind of cheese.
- Tortillas: in this recipe we used 10-inch tortillas. Mission tortillas are our favorite, but any kind will do. Use low carb tortillas if you are counting carbs!
- Seasonings: sprinkle salt, pepper, onion powder, garlic powder or whatever your favorite burger seasoning is on that beef!
- Onion: I used a medium sized red onion half to sauté and then add to the burger.
Sauce ingredients:
- Mayonnaise (I only use Hellmans!)
- G hughes sugar free sweet Thai Chili Sauce (could sub with ketchup or another sauce)
- Spice: sugar, vinegar, paprika, sea salt, garlic & onion powder.
- Sweet pickle relish (or dice up a sweet pickle if you are in a pinch).
Toppings: we also topped ours with chopped lettuce. It would taste great with guacamole or spinach too. PS -Sams club guacamole is THE BEST.
Taco Substitutions and Variations
- Meat: try ground turkey or venison in place of ground beef
- Spices: use any spices you like on your burgers or add heat if you desire.
- Sauce: replace the sauce with your otherwise favorite sauce for burgers (but I really think this sauce makes the recipe the best). Try a big mac sauce on this smash burger taco.
How to make smash burgers with tortillas
- Preheat and prep
Preheat your griddle to 375 F. Grease with butter, oil or tallow.
- Form smash burger tacos
While waiting for griddle to preheat, form your burgers. I made 4 smash burgers from 1 lb of beef. Make sure it is spread well and thin. Take raw beef and flatten on with hands. Sprinkle the open side with salt, pepper, onion powder, or a general burger seasoning if you desire.
- Cook ’em
Once griddle is to temperature, cook tacos hamburger side down first– for about 6 minutes. Then, flip the smash taco and cook the tortilla for another 3-5 minutes or until burger reaches internal temp of 165 F minimum. The last couple minutes of cooking, top the burger with cheese.
- Onions
while smash burgers are cooking-dice onion up and place on griddle with the burgers. Cook until soft– I try to cook them in the fat the burgers are draining. Use a little butter if needed.
- Sauce
Add all sauce ingredients to medium sized bowl and mix together well
- Assemble and enjoy
Once burger is finished cooking, top with onion and sauce. Use lettuce, tomatoes or more as toppings if desired. Enjoy!
FAQs – Smash Burger Tacos
It is seasoned ground beef pressed thinly onto a tortilla and cooked on a griddle or skillet. It is viral for a reason! It’s so crispy, juicy and creates a delicious tortilla. Top with your favorite toppings and a big mac sauce.
You can use a skillet, too. Just try to have something large so you don’t have to make multiple batches.
Griddles are nice for things like smash burgers, our fluffy pancake recipe and more– handy to have!
Of course- use low carb tortillas, low sugar sauces instead of big mac sauce and lean meats. Try for 95% lean beef instead of something like 80% to help with protein and lower fat.
Not as good as fresh. To reheat, warm in an air fryer to crisp the tortilla back up for best results.
Perfect little field meal..just don’t forget the napkins!

Smash Burger Tacos with Big Mac Inspired Sauce
Equipment
- measuring utensils, spatula
- knife for dicing onion
Ingredients
- 1 Lb Ground beef
- 4 Slices cheese Colby jack, cheddar, pepper jack
- 4 10 inch tortillas
- salt, pepper, onion & garlic powder to taste seasoned on burgers.
- 1/2 medium sized onion roughly diced, I used red onion
- chopped lettuce for topping
Big Mac Inspired Sauce
- 1/3 Cup mayonnaise Hellmans is the best
- 1/2 Tsp paprika
- 2 Tbsp G hughes sugar free Thai Chili wing sauce replace with mustard or another sauce if preferred
- 1 Tbsp sweet pickle relish
- 1/2 Tsp garlic powder
- 1/2 Tsp onion powder
- 1 tsp Sugar
- 1/2 tsp vinegar
- 1/2 tsp fine sea salt
Instructions
Smash Burger
- heat griddle to 375 F. Grease with butter or oil.
- Flatten raw burger thinly on each tortilla. I did 3-4 tortillas with 1 lb of hamburger. Sprinkle with seasonings such as sea salt, pepper, garlic or onion powder.
- Once griddle is hot, throw the tortilla burger mix on the griddle. Hamburger side down! Cook for approximately 6 minutes, smashing down a couple of times. Throw the diced onions on the griddle at the same time and sauté until soft.
- Then flip to the tortilla side, and cook for an additional 3-5 minutes. Top with slices of cheese while cooking the tortilla side.
- While burgers are cooking, mix all of the sauce ingredients together.
- Top the burger with sauce and favorite topping such as lettuce, pickles, guacamole.
