King Ranch Beef Casserole is a delicious mixture of lean ground beef, cream of chicken soup, cream of celery soup, onion, bell pepper and seasonings layered between corn tortillas, crushed Doritos and cheese.
King Ranch Beef Casserole does NOT have ranch seasoning in it, by the way..
This casserole is the spin off of the classic King Ranch Casserole made from chicken, but I switched it up a bit and made with ground beef and added Doritos to the mix. I actually had never had a King Ranch Casserole before (and there is actually NO ranch seasoning in it, by the way!) but had accidentally purchased 2 cans of Cream of Celery soup and started researching ways to use them up. Now, I might be buying Cream of Celery on purpose after trying this recipe!
Easy substitutions
You could very easily substitute the condensed soup for any of your favorite kinds, such as cream of mushroom. You could also use ‘healthy’ versions of the condensed soups if you wish. This was originally a chicken casserole, you could use 3 cups of chicken instead of beef. Four tortillas could be used instead of corn, but be aware that they may get soggy. I thing this could taste great with a can of biscuits as the base layer, too. I have a taco casserole recipe that uses biscuits and I feel this would work similarly to that (I plan to share that recipe..another day!).
Dorito King Ranch Beef Casserole
Equipment
- 1 9×13 inch casserole pan
- 1 cutting board
- 1 utensils for cutting and measuring
- 1 large skillet
Ingredients
- 8 corn tortillas cut into 1-inch strips
- 1 lb lean ground beef browned
- 1 10.75oz can cream of celery soup can switch for cream of chicken or mushroom
- 1 10.75oz cream of chicken soup
- 1-2 bell peppers any color, diced
- 1/2 onion chopped
- 1 10 oz can of diced tomatoes and green chiles I used mild, undrained
- 1 tbsp chili powder
- 2 cups shredded cheddar cheese
- 1 9.25 oz Package Doritos any flavor, crushed
- 1 tbsp olive oil
- 1 tsp minced garlic
Instructions
- Preheat oven to 350 F
- In a large skillet over medium heat, saute onion and pepper in oil until tender. Add garlic and saute an additional minute. Stir in browned beef, soups, tomatoes and chili powder.
- Line your casserole dish with half of the tortilla strips
- Top with half of the beef mixture and 1 cup of the cheddar cheese, and half of the dorito mixture.
- Repeat layers one more time.
- Bake at 350 F for 30-35 minutes until starting to bubble.
- Enjoy!
