King Ranch Casserole with beef is a delicious mixture of lean ground beef, cream of chicken soup, cream of celery soup, onion, bell pepper and seasonings layered between corn tortillas, crushed Doritos and cheese.

This casserole is the spin off of the classic King Ranch Casserole made from chicken, but I switched it up a bit and made with ground beef and added Doritos to the mix. I actually had never had a King Ranch Casserole before. I had accidentally purchased 2 cans of Cream of Celery soup and started researching ways to use them up. Now, I might be buying Cream of Celery on purpose after trying this recipe!
Ingredients in King Ranch Casserole:
8ย corn tortillasย cut into 1-inch strips
ย lean ground beefย browned
cream of celery soupย – 1 can. This can be substituted with more cream of chicken soup, too.
cream of chicken soup– 1 regular sized can.
1-2ย bell peppersย any color, diced
1/2ย onionย chopped- use white or yellow.
10 ozย can of diced tomatoes and green chilesย I used mild, undrained
shredded cheddar cheese– use mild or sharp. Hand shredded will melt best.
Package Doritosย any flavor, crushed
Misc: olive oil minced garlic, chili powder

Substitutions and variations:
You can replace ground beef with ground venison or even chicken- most king ranch casseroles have chicken in them anyways!
Here is a more traditional king ranch recipe from The Cozy Cook who never lets me down with her recipes!
You can experiment with different soups- use all cream of chicken or cream of celery, cream of mushroom.
Healthier Substitution for Cream of Chicken?
We make โcream of anythingโ soup mixes that replace cream of mushroom or cream of chicken in a recipe. One of our mixes makes 4 cans worth of soup mix. Check it out here.
King Ranch Beef Casserole does NOT have ranch seasoning in it, by the way.. when I was researching it, I thought for sure it would!
Four tortillas could be used instead of corn, but be aware that they may get soggy. I thing this could taste great with a can of biscuits as the base layer, too. I have a taco casserole recipe that uses biscuits and I feel this would work similarly to that.
King Ranch Beef Casserole FAQs
sort of. The Doritos will be soggy- if you reheat in air fryer it will taste much better as leftovers!! It crisps the Doritos right up (pro tip for taco pizza, too)
keep king ranch casserole leftovers in an air tight container for 3-4 days. Warm in airfryer or microwave
I have not tried it, but have doubts it would make a good freezer meal.
