Ground beef, cream of chicken soup, cream of celery soup, cheddar cheese, bell peppers, onion, corn tortillas and doritos make for a delicious week night casserole!
In a large skillet over medium heat, saute onion and pepper in oil until tender. Add garlic and saute an additional minute. Stir in browned beef, soups, tomatoes and chili powder.
Line your casserole dish with half of the tortilla strips
Top with half of the beef mixture and 1 cup of the cheddar cheese, and half of the dorito mixture.
Repeat layers one more time.
Bake at 350 F for 30-35 minutes until starting to bubble.

NOTES: Other types of condensed soups can be used- cream of mushroom, chicken, etc.Can substitute with 'healthy' condensed soups.Flour tortillas could be used in place of corn tortillas, but could be a bit soggier.3 cups of cubed chicken can replace the beef in this recipe
