This caramel French Toast Bake is a perfect weekend or holiday brunch recipe that will please any crowd. I use this recipe in my freezer meal business, creating it hundreds of times, and customers LOVE it. The caramel bottom and flavorful custard-like bake is always a hit. - bread: French, Italian Bread, sourdough, brioche
- milk: I have only tried cows milk in this recipe
- butter
- eggs: recipe calls for 7 eggs, but the recipe is very forgiving. Sometimes I am using jumbo eggs, other times more of a medium sized egg.
- Ground Cinnamon
- Brown Sugar

How to Make French Toast Bake

- Prep
dice & cube your bread, preheat the oven to 400 F, spray your 9×13 pan
- Egg Mixture
Add cracked eggs, milk, cinnamon into a medium or large bowl and mix whisk until well combined. Set aside.
- Caramel
On medium heat, melt the butter in a pot and then add all of the brown sugar. Let is be on heat, and whisk, until well combined. Texture will be smooth once finished. Pour in the bottom of your greased pan, I reserve 1/4 cup to drizzle on top.
- Assemble and Bake
Add the diced bread on top of the caramel, then pour the egg mixture over. If you saved any caramel, drizzle what is left on top. Bake at 400 F for 25-35 minutes until internal temp reaches 160 F, casserole is golden and middle is setting.
Variations to French Toast Bake
Caramel Apple French Toast Bake: Slice up apples and top the french toast for a delicious fall flavored bake!
Cream Cheese: dice up 4 oz of cream cheese and add to the tope with berries.
Toppings: top with powdered sugar, brown sugar, cinnamon, or syrup

this freezes well both before baking and after.
Before Baking: assemble the casserole completely in a freezer safe pan, cover with foil or lid, freeze for up to 3 months. Thaw completely and bake as instructions indicate.
Freeze After Baking: let the casserole cool completely after baking, then cover and freeze for up to 3 months. Thaw, and warm in oven at 350 F covered for the first 20 minutes, then uncovered until warmed through.
Store in air tight container in refrigerator for 3-4 days. Just warm up in microwave to enjoy.
I have used many kinds of bread for this.
Italian, Brioche, French or Sourdough all work really well.
I have used just regular sandwich bread before- still good- just not as great of texture. Just fine for a quick breakfast at home.
IDEA: I like to save my sandwhich ends or “butts” and freeze in freezer bag. Once I get enough, I cube up and make into a French Toast Bake. It is not perfect, but a tasty breakfast that helped avoid food waste!
The top will be golden, caramel may be bubbling from the edges, and middle will be set. This has raw egg in it, so be sure the middle temp is at 160 F.

Caramel French Toast Bake
Ingredients
- 1/2 loaf diced & cubed bread (about 8 oz, 1/2 loaf) french bread, sourdough, italian bread, brioche
- 7 large eggs
- 1-1/2 cup milk whole
- 2 tsp vanilla extract
- 2 tsp ground cinnamon
- 1/2 cup butter salted or unsalted
- 1 cup packed brown sugar
Instructions
- Preheat oven to 400 degrees. Spray a 13×9 inch pan and set aside
- In a medium or large bowl, crack the eggs and whisk with the milk, cream, vanilla and cinnamon. Set aside.
- On medium heat, melt butter in pot. Then, add the brown sugar and whisk until well combined. If the butter and sugar seem to be somewhat separated- it isn't done yet. Continue to whisk over the heat until it is very smooth.
- Pour the caramel on the bottom of your greased pan. I like to set aside appx 1/4 cup to drizzle on the top.
- Next add the cubed bread on top of the caramel sauce, then top with the egg mixture. Drizzle the remaining caramel on top if you wish.
- Bake the casserole at 400 F for 25-35 minutes (uncovered) until the top is golden brown and the sides are bubbling a bit, and center is set. Internal temperature of casserole should reach 160 F.
