Easy, creamy, crockpot beef stew is a true โdump and goโ dinnerโand an amazing comfort food dish. Simple ingredients: beef, potatoes, carrots, onion, beef broth, cream of chicken soup and seasonings.
Creamy beef stew ingredients
- Beef. 1 lb of stew meat. Trimmed and cut into bite sized pieces.
- 4-5 large potatoes. I used red potatoes and left the skin on, but peel them if you wish. Diced into bite-sized pieces.
- carrots- about 1 cup of sliced carrots. Use more or less if you wish.
- onion – 1 medium sized white onion diced
- cream of chicken soup- 1 10.5 oz can. Can also use our homemade cream of anything soup mix if you wish.
- 1-2 cups shredded cheddar cheese. Hand shredded melts best.
- 2.5 cups beef broth
- Garlic, salt & pepper and Italian seasoning โto taste. I make my own quality italian seasoning that we sell on our store- we will ship!
How to prepare
This one is SUPER simple. Just dice up the potatoes, trim the beef and dice into bite sizes, dice up any veggies you are adding. Then, add it ALL into the crockpot with the soup, broth, and seasonings.
Carrots and potatoes can both go into the crockpot right away- if you are using veggies such as zucchini-add those in at the end so they don’t get mushy.
Substitutions and Variations
- Use 1 lb browned beef, turkey, venison instead of stew meat
- add a package of frozen veggie mix or donโt use any veggies at all
- Roast zucchini in your oven and add the last 30 minutes of cooking.
- leave out the cheese and cream of chicken soup for a lighter stew.
- Add a couple of stalks of celery, diced, for a crunch
Leftover Storage
- Cool and refrigerate in an air tight container for up to 4 days. Warm in microwave.
- Freezer: cool and place in freezer safe containers. Thaw and warm up on microwave or over stovetop. Could also defrost in microwave from frozen. This dish freezes well.
Can this Easy Creamy Crockpot Beef Stew be meal prepped in advance?
Absolutely. This can be a meal that is prepped in advance and frozen or stored in fridge for 1-2 days.
Freezer Meal Prep: prepare a gallon freezer bag. I prefer ziploc freezer bags. Dice the potatoes up and prep the meat. Dump all the ingredients in the freezer bag. Remove all the air possible from the bag, and then seal it. Freeze flat.
When ready to use- thaw and dump in crockpot. Prepare per recipe instructions.
This is a great meal to prep and freeze for a new mom, sick family member, etc.

Sometimes, your kids will eat it better if they are involved in making the dish!
- let them help chop potatoes, onion, or carrots. We use this kid safe kitchen set in our kitchen (Hank has been using it since about 2-1/2 years and he is now 4-1/2)- comes with safe knives, cutting board and more.
- have them pour the broth into the pot. Have them use their math skills by counting cups, or talk about fractions with older children.

Easy Creamy Crockpot Beef Stew
Equipment
- 1 6 or 8 qt crockpot (I love programmable crock pots- linked!)
- cutting board
- cutting knife
- can opener
- measuring utensils
Ingredients
- 1 lb beef stew meat trimmed and diced bite sized
- 4-5 large potatoes I used red potatoes, can skin if desired, diced bite sized
- 1 cup carrots diced bite sized
- 1 10.5 oz can cream of chicken soup
- 2 cups beef broth have extra on hand if want to change consistency
- 2 tsp Italian Seasoning or more to taste
- 1 heaping tbsp minced garlic
- 1/2 tsp salt and pepper or more to taste
- 1 cup shredded cheddar cheese
Instructions
- Dice the potatoes, meat, onion and carrots to bite sized peices.
- Next, line your crockpot for easy clean=up (optional), then dump all the ingredients into the pot. Give the ingredients a good stir. Set the crockpot on high for 4 hours or low 6-7 hours. Ready when potatoes are cooked to your desired softness.
