Dump & Go Burrito Bowls are a quick, healthy, weeknight dinner idea – chicken breast, beans, corn, rice, tomatoes, broth & spices to cook in the slow cooker or instapot. Add a tortilla to make it a burrito or serve on a bed of lettuce.
Ingredients in Dump & Go Burrito Bowls
Chicken – 2 small/medium sized chicken breast. I do think this would also be a great option with a beef roast.
Black Beans – 1 15 oz can of black beans, any kind you like.
Corn & Diced Tomatoes – I used 15 oz can of diced tomatoes and corn. You could also use 2 cups of freezer corn.
Chicken Broth – I would use homemade or low sodium. If you are in a pinch water would work too. The broth just helps with flavor.
Seasonings – simple seasonings of salt and taco seasoning. I used 2 tbsp of taco seasoning (about a packet worth). Our homemade taco seasoning recipe is here. You can also purchase the taco seasoning in bulk on our website.
Can I make chicken burrito bowls in the instapot?
Absolutely! I have noted the brief instructions in the notes of the recipe. Pressure cook in the instapot for 20 minutes with a natural release. You can also cook this from frozen in the instapot- add 5 minutes of cook time with a natural release.

When I say these are easy, I mean, they are EASY!
Literally, just dump everything into a crockpot or instapot (bonus points if you use a liner on your crockpot for an even easier clean-up!). The full details are below but this is an easy, dump, dinner!
Substitutions and Variations for Healthy Chicken Burrito Bowls
- replace chicken with shredded beef. This is how I cook shredded beef in the Instapot.
- add more veggies – top with guacamole or avocado, add bell peppers or jalapeรฑo
- Mix up the toppings: top with queso, queso fresca, guacamole, sour cream.
Are dump & go chicken burrito bowls freezer friendly?
Yes, these are very freezer friendly. In fact, I had them as an option on our freezer meal menu for our freezer meal business in the past. In a gallon freezer bag, ‘dump’ all the ingredients in. Then, thaw and cook per instructions in recipe card. You could also cook straight out of the freezer in the instapot (just thaw it enough to get the ingredients out of the bag!).
Are burrito bowls dairy-free?
They can be! Just don’t sprinkle the cheese on. If you watch your ingredients, these can also be gluten free.
Our favorite slow cooker for the job
I just recently upgraded to a programmable crock pot. Prior to having this new crockpot I would start it in the morning before work, and try to rush home afterwards to avoid it being overcooked. These new crockpots totally eliminate that! I have the crockpot brand programmable and enjoy it, however there are soo many options and sizes to fit your own needs.
What to pair with dump chicken burrito bowls
- eat with a side salad or on a salad
- make this into a burrito wrap with a regular or low carb burrito
- sprinkle Doritos or tortilla chips in the bowls

Dump & Go Chicken Burrito Bowls
Equipment
- cooking utensils
- crockpot liner optional
Ingredients
- 1-1/2 lbs chicken breast about 2 average sized
- 1 15 oz can black beans
- 1 15 oz can corn or use frozen
- 1 15 oz can diced tomatoes
- 1 cup brown rice substitute with white rice if desired
- 1.5 cups chicken broth
- 1/2 tsp salt to taste
- 1-2 tbsp taco seasoning to taste
- toppings avocado, guacamole, lettuce, cheese
Instructions
- Line your crockpot with a crockpot liner for easy clean up (optional).
- Add the whole chicken breast, broth, beans, corn, tomatoes, rice & spices to the crockpot. Give it a good stir.
- Set crockpot on high or 3-4 hours or low for 5-6 hours.
- Take chicken breast out, shred with two forks and then place back into the crockpot. Let simmer 20 more minutes. Taste the mixture to see if more taco seasoning or salt is needed.
- Serve on a bed of lettuce or in a tortilla. Top with cheese and your other favorites!
