Dump & Go Chicken Burrito Bowls

Dump & Go healthy chicken burrito bowls are an easy week night meal to put together. Chicken breast, rice black beans, diced tomatoes, broth, corn and spices.

Equipment

Ingredients
  

  • 1-1/2 lbs chicken breast about 2 average sized
  • 1 15 oz can black beans
  • 1 15 oz can corn or use frozen
  • 1 15 oz can diced tomatoes
  • 1 cup brown rice substitute with white rice if desired
  • 1.5 cups chicken broth
  • 1/2 tsp salt to taste
  • 1-2 tbsp taco seasoning to taste
  • toppings avocado, guacamole, lettuce, cheese

Instructions
 

  • Line your crockpot with a crockpot liner for easy clean up (optional).
  • Add the whole chicken breast, broth, beans, corn, tomatoes, rice & spices to the crockpot. Give it a good stir.
  • Set crockpot on high or 3-4 hours or low for 5-6 hours.
  • Take chicken breast out, shred with two forks and then place back into the crockpot. Let simmer 20 more minutes. Taste the mixture to see if more taco seasoning or salt is needed.
  • Serve on a bed of lettuce or in a tortilla. Top with cheese and your other favorites!

Notes

Instapot: follow the same steps - pressure cook for 20 minutes. Let naturally release until pressure is gone. Then, put instapot on 'Saute' mode and take the chicken out to shred with 2 forks. Put back into the instapot and let simmer for 20 minutes. 
*can cook chicken breast from frozen in instapot.
Freezer Friendly: double this recipe and put second batch of un-cooked ingredients in a freezer bag for a easy 'dump & go' option later!
