Creamy Ground Beef & Rice Casserole
Rice, ground beef, onions, cream of mushroom soup, sour cream, spinach, frozen veggies & seasonings baked together and topped with mozzarella cheese. Versatile & easy weeknight meal!

- 1 lb ground beef
- 1 small onion diced
- 2 tsp minced garlic
- 1-1/2 cups rice, uncooked brown or white
- 1 can cream of mushroom soup or cream of chicken, celery, etc
- 1-2 cups spinach finely chopped
- 1/2 cup frozen veggies, optional broccoli, riced cauliflower, mixed veggies,etc
- 1/3 cup sour cream
- 1/2 tsp oregano
- 1/2 tsp salt
- 1/2 tsp pepper
- 1 cup water or milk
- 1 cup mozzarella cheese
Preheat oven to 350 F. Brown the beef, onion & garlic in a skillet. Once completely cooked, drain.
Mix all ingredients together in large bowl, except mozzarella. Then put in dish.
Cook at 350 F uncovered for 30-35 minutes. Add mozzarella, cook another 5 minutes.
TIPS, SUBSTITUTIONS & MORE:
Can substitute cream of mushroom soup with dry powder and mixed with 2-1/2 cups milk, in place of the can of soup & water/milk.
Add any frozen veggies your family likes, or even a small can of mushrooms.
Add more mozzarella if you'd like..you can't go wrong with more cheese!
I think this would taste great with chicken instead of beef, too.
