This cottage cheese bagel recipe was inspired by TikTok video I saw by Smaller Sam PCOS (love her content, btw!). I believe she got the recipe inspiration from Bethenny Frankel. I did add my own ‘flair’ though as I always do! They added a unflavored protein powder which I did NOT. Someday, I’d like to try that way though.
Ingredients in Cottage Cheese Bagels
- cottage cheese – I have only tried this with 4% cottage cheese. Any brand works. I used Great Value. If using a lower fat option, the texture may not be as good.
- Flour – all-purpose flour works great in this recipe.
- Baking Powder – we need this to make the bagels rise.
- Salt – I add a small amount of salt for flavor
- Optional Seasonings: minced garlic, minced onion, ‘Everything Bagel” seasoning. These are all optional and feel free to mix these up!
- Egg – Whisking up a small egg for egg wash.
How To Make Savory Protein Cottage Cheese Bagels
- Preheat Oven
Preheat oven to 375 F and line a baking sheet with parchment paper
- Blend Cottage Cheese
Use an immersion blender or food processor to blend the cottage cheese until it is smooth and creamy.
- Combine Ingredients
In a large bowl, add flour, baking powder, minced garlic and onion (if using). Whisk together. Then add the cottage cheese. Using floured hands begin combining the dough and kneading. I have found that using a spatula or spoon does not work as well as using clean hands. Knead the dough in the large bowl (if you have space) or on a floured surface until it is smooth.
- Split the dough
Split into 3-4 balls and begin shaping into bagels. Depending on how large you want your bagels will depend on if splitting into 3 or 4. Shape them as pictured below and add to sheet pan.
- Brush with egg and season!
Whisk a small egg in a small bowl and then use a pastry brush to brush on top of each bagel. Sprinkle “everything bagel” seasoning or any seasoning of choice on top of the bagel if you wish.
- Bake
bake for 25-30 minutes until golden. Then let cool for 10-15 minutes.

Savory Cottage Cheese Bagels
Equipment
- 1 large bowl
- measuring utensils
- blender or food processor or immersion blender
- 1 small bowl for whisking egg
- 1 whisk
Ingredients
- 1 cup flour
- 1/4 tsp sea salt
- 1/2 tsp minced onion optional
- 1/2 tsp minced garlic optional
- 2 tsp baking powder
- 1 cup 4% cottage cheese blended
- 1 small egg
- everything bagel seasoning to top bagels (optional)
Instructions
- Preheat oven to 375 F. Add parchment paper to a small to medium sized sheet pan. Set aside
- Using a blender or food processor, blend your whole fat cottage cheese until it is a smooth, creamy, texture. Set aside.
- Grab a large bowl and add flour, salt, baking powder and any seasonings you choose to add (minced onion, garlic). Whisk together.
- Add the cottage cheese mixture to the flour mixture in the bowl. Flour your hands and start kneading. At first you can try to mix with a spoon or rubber spatula, but I found it was just easier to mix with clean hands. Knead until well combined. You can knead on a clean, floured, surface- but I had a large enough bowl that it was easy to knead in the bowl to prevent extra clean-up.
- Divide the ball into 3-4 smaller balls and knead until smooth. Then, create a well-defined hole in the middle and create a bagel shape with each ball. (as pictured above).
- Next add to the sheet pan. In a small bowl, whisk the small egg and then use a pastry brush to brush on the bagels. Sprinkle 'Everything Bagel" or any other seasoning you'd like on top of the bagel. Bake in oven for 25-30 minutes until they are golden. Let rest for 10-15 minutes before eating.
