How to hard boil farm fresh eggs the easy way! All you need is eggs, a little water and a pressure cooker/ instapot for easy-to-peel hard boiled eggs.

I had always heard that eggs that were too fresh are difficult to hard boil. Now that I have about 30 chickens on the farm–I just simply don’t have the patience to wait for the eggs to “age”, and besides–that sounds like too much work!
Why I love this method
- I don’t have to wait for my eggs to “age” to hard boil
- It is simple to remember 5-5-5 (more on that later..)
- Perfect peel- every time and it’s a great wait to meal prep
Is it really harder to boil farm fresh eggs, and why?
Yes, per the kitchen journal— they truly can be harder to peel. It has to do with the membrane of the egg. Basically, when it is fresh–it sticks to the shell more. When they age it separates making it easier to peel.
When using an instapot or pressure cooker, like in our recipe, it is easier to peel because the process uses steam which can help the membrane separate. (per cook indocs)
Ingredients for the perfect hard boiled egg
Eggs – I put a dozen in the ingredient list, but really you can do however many fit without getting crowded or how ever little. It doesn’t change the cooking times.
Water – 1 cup water
That’s it!

How to Hard Boil Fresh Eggs
- Bring Eggs to room temperature if possible
this helps prevent cracking during cooking.
- Prep Instapot
add trivet to bottom (also prevents cracking) and add water
- Pressure Cook
Add eggs to instapot. Set to manual pressure cook for 5 minutes with a natural release for 5 minutes. Prepare an ice bath and after venting all the steam out of the instapot–add eggs to ice bath for 5 minutes.
- Remember 5-5-5
5 Minute Pressure Cook
5 Minute Natural release (followed by quick release if needed)
5 minute ice bath

FAQs
Fresh eggs have a lower pH which makes them stick more tightly to the membrane. As eggs age, the pH rises and makes peeling easier since it doesn’t stick to the shell as much.
It helps the membrane separate which makes the peeling easier
You can also try steaming them for 12-13 minutes over boiling water and follow with an ice bath–but I have not tried this method personally.
They need to be refrigerated, and are good for up to 7 days both peeled and unpeeled.
If peeled-store in an airtight container with a damp paper towel to prevent drying out.
This means they were overcooked. They are perfectly safe to eat–but make sure you are not letting them natural release for longer that 5 minutes to prevent being over done.

- egg salad (my favorite-make sure to use Hellman’s mayo)

How to Hard Boil Farm Fresh Eggs
Equipment
- 1 instapot with trivet
Materials
- 12 large eggs more can be fit if you have room, or use less. It doesn’t effect the recipe time.
- 1 cup water
Instructions
- Place trivet inside of instapot (this helps prevent cracking of eggs!). Add 1 cup water.
- Let eggs come to room temperature if you have time (this prevents cracking). Add eggs to instapot.
- Add lid of instapot and place valve on “seal” manual set to 5 minutes of pressure cooking.
- Natural release for 5 minutes. While that’s in process, create an ice bath for the eggs. Quick release steam after 5 minutes- then add the eggs to ice bath.
- Set in ice bath for 5 minutes. Once done- peel and enjoy or store in refrigerator for another day!
