This egg roll in a bowl with ground turkey is a quick, protein packed, meal that can be ready in about 20 minutes! Lean turkey, coleslaw mix, carrots, soy sauce, sesame oil and a blend of savory spices. Serve on its’ own for a high protein lower carb option or pair with a bed of rice. So good!

Why you will love this Egg Roll in a Bowl Recipe
- it is protein packed – ground turkey is a lean, high protein meat and makes a healthy dinner. Learn more about the health benefits of ground turkey from American Heart Assn.
- ready in 20 minutes – enough said.
- no chopping veggies – since I use a bag of pre-shredded coleslaw mix and matchstick carrots, all the prep is already done! (of course, if you want, you can buy the whole veggies and shred yourself)
- it is freezer friendly! I actually have used this recipe in my freezer meal business.
Ingredients in this Recipe
- ground turkey – any kind you can find at the store will work. You could also use ground beef or venison.
- Coleslaw Mix – NOT with dressing- just the cabbage and carrots prepped for you. I get the Taylor Farms brand at Sams Club. You could also chop your own cabbage and carrots.
- Match Stick Carrots – you can find these at most grocery stores
- Onion or Minced Onion – my family does not like real onion in recipes, so I usually use minced onion for that reason. (and, I hate crying and chopping onions!)
- Low Sodium Soy Sauce – I recommend using low sodium, as I personally do not like the flavor of rull sodium. I get the Great Value brand at Wal Mart usually, any kind would work.
- Toasted Sesame Oil – I really like this Oi! toasted sesame oil in this recipe- it has great flavor.
- Ground Ginger – feel free to use any kind. Could also use ginger paste but make sure to convert to the correct amount.
- Minced Garlic
- Salt & Pepper – basically to taste. I used 1/2 tsp of each.
- Brown Sugar – this again is to taste. I put 2-3 tbsp in the recipe.
Egg Roll in a Bowl Substitutions and Variations
- Spices: use real onion instead of minced, real ginger instead of ground, real garlic instead of minced.
- Sweetener: instead of brown sugar, try honey.
- Veggie: use a head of cabbage and slice up your own carrots if you wish- but it will take longer!
- Protein: substitute ground turkey with ground beef or venison.
- Soy Sauce: use full sodium or if you’re sensitive to soy try coconut aminos.
How to Make Egg Roll in a Bowl
- Cook Ground Turkey
In a large skillet on medium high heat- brown the turkey. Drain any fat if desired and return to skillet. I recommend a meat chopper to break up the meat.
- Add Sauces and Spices
Add the soy sauce, sesame oil, sugar and spices to the ground turkey and mix.
- Add Veggies
Next add the coleslaw mix and carrots. I add the lid to the skillet and let it sit for about 5 minutes, so veggies soften and then combine it well and cook a few more minutes until veggies are to desired tenderness.
Leftover Storage and Freezer Instructions
- To refrigerate leftovers: let the dish cool and then package in an airtight container. Store in fridge for up to 4 days. To reheat- just warm in microwave.
- Freezer Instructions: make this recipe as noted. Let cool and store in a gallon freezer bag or a freezer safe container. When ready to eat, thaw and warm in microwave. Store in freezer up to 3 months. This freezes well and is a great, healthy, freezer meal option!
Egg Roll FAQs
Because egg roll in a bowl is a lower carb, deconstructed version of a normal egg roll (not actually in the roll). Made with what is in this recipe- ground meat, cabbage, carrots and seasonings!
of course, substitute for equal amounts of ground beef, ground pork or try chicken or venison.
Yes, this would be considered a lower carb yet higher protein recipe (23 g protein per serving!) I however am not an expert on these special diets- learn more about keto and low carb.
Actually, NO! The traditional roll DOES have an “egg roll” that is what the contents is wrapped in – so that is where the “egg” part comes from.
It can be if you watch what kind of soy sauce you use! Try coconut aminos or tamari instead to make this gluten free.
