Crock pot Creamy Sausage & Potato Soup is perfect for Fall
Creamy Crock Pot Sausage & Potato Soup is a delicious pork sausage, potatoes, carrots, onion, garlic, sour cream, cheese, chicken bouillon and more make for the perfect meal on a chilly day. I love to add Rhodes Frozen Bread Dough as a side- you could also shape these into bread bowls..yum!
Ingredients in Creamy Sausage and Potato Soup
- 1ย Lbย Pork sausageย browned- could substitute for ground beef, turkey, etc. but I prefer sausage.
- 3ย cupsย potatoesย peeled and cubed – any kind of potato you like should work fine.
- 3/4ย cupย carrotsย sliced
- 2ย chicken bouillon cubes – or use low sodium chicken broth (2 cups) and skip the water
- 2ย cupsย water
- 1/2ย Onionย chopped
- 8ย ozย velveeta
- 1/2ย cupย sour creamย or plain Greek yogurt
- 1ย tspย garlicย minced
- 1ย tbspย parsley flakes
- 1/2ย tspย pepperย or to taste
- 3/4ย tapย saltย or to taste
- 1ย tspย basil
- 2ย cupsย milk
- 2ย tbspย flour
Can you make sausage and potato soup in the crockpot?
Yes, it is great in the crockpot. Just brown the sausage before adding to the crock. Everything else can cook low and slow.
Could you make this potato soup over the stove?
Most definitely. Brown the sausage then add the ingredients as mentioned below. Simmer on medium heat for about 45 minutes or until the veggies are soft to your liking and easily are pierced through by a fork.
Midwest Sausage and Potato Soup is freezer friendly!
There are two ways you could go about freezing this. As a โdump & goโ – in a gallon freezer bag add the BROWNED sausage and all other ingredients. Then, thaw and cook as instructed below in crock.
OR cook it as instructed below and then freeze leftovers. Freeze in individual containers for a quick lunch idea- just thaw and warm up!
Healthy substitutions?
If wanting to cut back on calories a bit, consider using lower fat sour cream or subbing with plain Greek yogurt for added protein.
Try swapping ground sausage for ground turkey, however, I like how the sausage tastes best!

Crock Pot Sausage and Potato Soup
Equipment
- 1 crock pot
- 1 cutting board
- 1 knife
- 1 crockpot liner Optional
Ingredients
- 1 Lb Pork sausage browned
- 3 cups potatoes peeled and cubed
- 3/4 cup carrots sliced
- 2 chicken bouillon cubes
- 2 cups water
- 1/2 Onion chopped
- 8 oz velveeta
- 1/2 cup sour cream or plain Greek yogurt
- 1 tsp garlic minced
- 1 tbsp parsley flakes
- 1/2 tsp pepper or to taste
- 3/4 tap salt or to taste
- 1 tsp basil
- 2 cups milk
- 2 tbsp flour
Instructions
- Place prepared potatoes, carrots, onion, bouillon and seasonings in crock pot. Cook on high, about 2 hours. Until veggies are tender.
- In a bowl, whisk flour and milk together. Then add to crock pot mixture- letting cook until thickened and bubbling.(30-45 minutes oh high)
- In a seperate bowl, add 1/4 cup of hot mixture from the crockpot with the sour cream (or Greek yogurt). Stir together, then add to crockpot. Keep crockpot on low.
- Lastly add the browned sausage and velveeta. Mix into the soup until melted. Do not boil mixture to prevent sour cream from separating. Enjoy!
Notes
TIPS + TRICKS:
Light sour cream can be replaced with regular sour cream. Low sodium chicken broth or regular chicken broth can be replaced for the 2 cubes of chicken bouillon.Keep room for the perfect fall dessert
