Place prepared potatoes, carrots, onion, bouillon and seasonings in crock pot. Cook on high, about 2 hours. Until veggies are tender.
In a bowl, whisk flour and milk together. Then add to crock pot mixture- letting cook until thickened and bubbling.(30-45 minutes oh high)
In a seperate bowl, add 1/4 cup of hot mixture from the crockpot with the sour cream (or Greek yogurt). Stir together, then add to crockpot. Keep crockpot on low.
Lastly add the browned sausage and velveeta. Mix into the soup until melted. Do not boil mixture to prevent sour cream from separating. Enjoy!
Notes
TIPS + TRICKS:
Light sour cream can be replaced with regular sour cream.Low sodium chicken broth or regular chicken broth can be replaced for the 2 cubes of chicken bouillon.
