Ingredients
  

  • 1 Lb Pork sausage browned
  • 3 cups potatoes peeled and cubed
  • 3/4 cup carrots sliced
  • 2 chicken bouillon cubes
  • 2 cups water
  • 1/2 Onion chopped
  • 8 oz velveeta
  • 1/2 cup sour cream or plain Greek yogurt
  • 1 tsp garlic minced
  • 1 tbsp parsley flakes
  • 1/2 tsp pepper or to taste
  • 3/4 tap salt or to taste
  • 1 tsp basil
  • 2 cups milk
  • 2 tbsp flour

Instructions
 

  • Place prepared potatoes, carrots, onion, bouillon and seasonings in crock pot. Cook on high, about 2 hours. Until veggies are tender.
  • In a bowl, whisk flour and milk together. Then add to crock pot mixture- letting cook until thickened and bubbling.(30-45 minutes oh high)
  • In a seperate bowl, add 1/4 cup of hot mixture from the crockpot with the sour cream (or Greek yogurt). Stir together, then add to crockpot. Keep crockpot on low.
  • Lastly add the browned sausage and velveeta. Mix into the soup until melted. Do not boil mixture to prevent sour cream from separating. Enjoy!

Notes

TIPS + TRICKS:

Light sour cream can be replaced with regular sour cream.
Low sodium chicken broth or regular chicken broth can be replaced for the 2 cubes of chicken bouillon.
