Muffin Tin Meatloaf

Forget Meatless Monday, how about Meatloaf Monday?! Ground beef, rice krispies, egg, BBQ sauce, worcestershire, salt + pepper, parsley, brown sugar. Topped with a ketchup, bbq and sugar sauce.. so easy and tasty!

Equipment

  • measuring utensils
  • 1 bowl to mix meat and sauce
  • spoon for mixing meat and sauce

Ingredients
  

The Meat Loaf

  • 1 lb lean ground beef thawed
  • 1/2 cup rice krispies or oatmeal, bread crumbs
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1/4 cup bbq sauce any kind. I use Sweet Baby Rays
  • 1 tbsp Worcestershire
  • 1 tbsp minced onion
  • 1 tbsp minced garlic
  • 1 egg
  • 1 tbsp parsley optional
  • 1 tbsp brown sugar

The Sauce

  • 1/4 cup ketchup
  • 1/4 cup bbq sauce
  • 1 tbsp brown sugar

Instructions
 

  • Preheat oven to 425 F. Grease muffin tins.
  • In a bowl, combine all of the meatloaf ingredients. Mix together well with a spoon.
  • With your hands, form 2-3 tbsp balls of the meat mixture and put in each muffin tin. It should make 10-12 'loaves',
  • In the same bowl, combine the sauce ingredients. Mix well with spoon. Place about 2 tsp worth of sauce on each loaf.
  • Bake in oven uncovered for approximately 20-25 minutes. Or until internal temperature is 160 F. Try not to overcook as it leads to dryness and burnt bottoms!

Notes

NOTES:
Do not overcook to prevent dryness and burnt bottoms.
Once cooked, set the meat loaves on a paper towel to absorb grease. 
Leftover Storage:
cool and place in airtight container in fridge for 3-4 days.
Freezer: freeze uncooked per instructions in above in blog post OR freezer already cooked to thaw and warm in microwave.
SUBSTITUTIONS:
Beef--ground venison or turkey. 
Rice Krispies--breadcrumbs or oatmeal
Use sugar free sauces for a low-calorie entree. 
Add 1/4 - 1/2 cup shredded cheese or cubed cheese into the meat mixture for cheesiness.
