These healthier apple cinnamon muffins are simple to make, and are a hearty breakfast or snack muffin. Greek yogurt, honey and apples all included for a healthier breakfast. They are moist, kind of heavy, taste great alone or with butter warmed up!
1/3cupcooking oilI used olive oil, but coconut oil or vegetabe oil would work
1/2cupplain greek yogurt
1/2cup unsweetened applesauceif using sweetened, it will just be a sweeter muffin
2largeeggs
2tspvanilla
1/4cupgranulated sugar
1/4cuphoneyor maple syrup
Instructions
Preheat oven to 425 F.
In a medium to large bowl, combine your dry ingredients with a whisk (flour, baking soda, baking powder, cinnamon, salt).
Prepare apples: next, dice 1 cup of apple into small pieces. You can remove peel or keep it on. Then, use a cheese grater to grate 1 cup of apple. (I kept peel on). Add the apples to your dry ingredients and gently stir. Set aside.
Pour the wet ingredients into the dry ingredients and mix together. I used a big rubber spatula. Mix until combined. Then, scoop into a muffin pan- about 1/4 cup of batter in each section. This will make 12 muffins.
Bake for approximately 15 minutes, or until toothpick comes out clean and tops are golden. Let cool and enjoy!

Muffin Storage: let cool and transfer to airtight container. Can set at room temp on counter for 2-3 days or store in fridge for up to 5 days.Freezer Instructions: let cool completely. Flash freeze on a sheet pan for 1 hour, then transfer to gallon freezer bag. Store in freezer for up to 3 months. For more protection from freezer burn, consider wrapping individually in plastic wrap. These freeze very well. Set on counter to thaw or warm in microwave in 30 second increments.
