Cowboy Casserole has a BBQ beef bottom layer, baked beans, cheddar cheese and is topped with corn bread. This is a perfect kid friendly, quick, weeknight meal - plus a cozy comfort food!
Preheat oven to 350 F. Then, add your already cooked BBQ mixture to the bottom of your small to medium sized casserole dish (about 9x9 dish).
Next, top with your can of baked beans. Stir together with the BBQ at the bottom of the pan if you wish.
Shred your cheese if you haven't already, and then top the meat and bean mixture.
Now, make the corn bread per the package instructions (1 egg, mix and 1/3 c milk- stir in medium bowl). Add 1 cup of corn to the cornbread mix if you wish, but not necessary.
Now, top the meat mixture with the mixed cornbread mix.
Add any other additional toppings if you like- jalapeños, more shredded cheese, bacon bits, etc.
Bake in the oven uncovered at 350 F for about 30-40 minutes until cornbread mix is cooked through and beginning to bubble and turn golden. Enjoy!
Cowboy Casserole Notes:Substitutions- use any BBQ recipe you desire. Change the meat- use ground turkey or BBQs shredded beef, pork or chicken instead of ground- use 2 cups of shredded just as you would the ground BBQ meat. Leave out the corn if you like. Use any cornbread box mix you want or a homemade recipes. Add toppings such as jalapenos, chiles, more shredded cheese. I have also made this with the cornbread on the bottom, but it is harder to tell when the bread is cooked through.Freezer: You can freeze leftovers. Let the casserole cool, then freeze in an air tight container for up to 3 months. Thaw and warm in the microwave.I would not suggest freezing uncooked, however you could freezer prep the BBQ meat alone for an easy protein for recipes such as this.
