Kickin' Good Mac and Cheese with Velveeta

This is the mac and cheese you will want to eat for the rest of time! Noodles, velveeta, cheddar cheese, milk, flour, garlic, salt, pepper, paprika and a little creole seasoning for a fun twist!

Equipment

  • 1 pot for boiling noodles
  • 1 skillet or pan for making cheese sauce (must be large enough for sauce + noodles)
  • measuring utensils
  • 1 strainer
  • spoon, whisk, etc. `
  • cheese grater if grating your own cheese (recommended)

Ingredients
  

  • 2 cups noodles ex. penne, maccaroni
  • 4-6 oz velveeta
  • 1/2 cup cheddar cheese shredded
  • 2 tbsp flour
  • 1.5 cups milk can use heavy cream for all or part of milk if desired
  • 1/4 tsp pepper to taste
  • 2 tbsp butter
  • 1/4 tsp salt to taste
  • 1/2 tsp minced garlic or garlic powder
  • 1-2 tsp creole seasoning optional
  • 1/2 tsp paprika

Instructions
 

  • Heat skillet/pan on medium heat.Boil noodles in a pot per the package instructions.
  • In the heated skillet, add 2 tbsp of butter. Once the butter is melted add 2 tbsp of flour and mix together. Add the seasonings, mix well. Then add the milk slowly. Stire for 3-5 minutes until it starts to thicken.
  • Once thickening. Add the grated cheese and cubed velveeta. Stir for about 5 minutes on medium heat until all cheese is melted. You may want to taste the cheese sauce to ensure it is seasoning to your liking.
  • Add the cooked, drained, noodles to the cheese sauce. Enjoy!

Notes

NOTES:
If you do not like 'hot' seasoning, skip the creole and add dry mustard powder, chili powder, or just 'as is'.
I added 4 oz of velveeta, but if you like extra cheesy add closer to 6 oz.
For the best melting cheese, grate your own cheddar cheese instead of using pre-shredded.
I sometimes us 1/2 cup heavy cream and 1 cup milk in this recipe to make the 1.5 cups of milk.
Add crumbled bacon, kielbasa or other sausage to make this a full meal. Throw in some veggies if you like, such as broccoli.
